Chapati – Swahili Soft Layered Flatbread
A beloved flatbread in Swahili homes, known for its soft, flaky layers. It's served with stews, beans, vegetables, or on its own for breakfast.
Servings: Makes 8–10 chapatis
⏱️ Total Time: ~1 hour (including resting)
🌶️ Difficulty: Easy
Ingredients
-
3 cups all-purpose flour
-
1 tsp salt
-
1 tbsp sugar (optional, for softness)
-
2 tbsp oil or ghee (plus extra for cooking)
-
1 to 1¼ cups warm water (adjust as needed)
-
Extra flour for dusting
Preparation (15–20 minutes + 30 min resting)
-
Make the Dough:
-
In a large bowl, mix flour, salt, and sugar.
-
Add oil/ghee and mix with fingers until crumbly.
-
Gradually add warm water and knead into a soft, elastic dough (~8–10 min).
-
-
Rest the Dough:
-
Cover with a cloth or cling film.
-
Let it rest for at least 30 minutes to make rolling easier.
-
Cooking Instructions (25–30 minutes)
Step 1: Roll & Layer the Chapatis
-
Divide dough into equal balls (8–10).
-
Roll one ball into a circle (~6 inches wide), brush lightly with oil, then roll it into a coil or spiral. Flatten again into a ball.
-
Repeat for all balls — this gives flaky layers.
-
Roll each ball into a thin round (~8 inches).
Step 2: Cook the Chapatis
-
Heat a heavy skillet or pan over medium-high heat.
-
Place a chapati on the hot pan. Cook for ~30 seconds or until bubbles form.
-
Flip, brush lightly with oil/ghee, and cook both sides until golden brown with light brown spots.
-
Stack cooked chapatis and cover with a clean towel to stay soft.
Step 3: Serve
-
Serve hot with maharagwe, mboga za nazi, beef/chicken stew, or just enjoy with tea!
