Swahili samosas are deep-fried triangular
pastries filled with spiced minced meat, onions, and herbs. A favorite snack or
appetizer across the Kenyan coast, served with chutney or chili sauce.
Ingredients
·
2 cups all-purpose flour
·
1/4 tsp salt
·
2 tbsp oil or melted ghee (for
dough)
·
Warm water (enough to make firm
dough)
·
Oil for deep frying
·
For the Filling:
·
250g minced beef or lamb
·
1 small onion, finely chopped
·
2 cloves garlic, minced
·
1 tsp ginger paste
·
1/2 tsp turmeric powder
·
1/2 tsp garam masala
·
Salt and pepper to taste
·
1 tbsp chopped fresh coriander
·
1 tbsp oil for sautéing
Preparation & Cooking Steps
1. In a bowl, mix flour, salt, and 2 tbsp
oil. Gradually add warm water and knead to a firm dough. Cover and let rest for
30 mins.
2. Meanwhile, prepare the filling: Heat 1
tbsp oil in a pan. Sauté onions, then add garlic and ginger.
3. Add minced meat, turmeric, garam masala,
salt, and pepper. Cook until meat is browned and moisture evaporates.
4. Stir in chopped coriander. Let the
filling cool completely.
5. Divide dough into small balls. Roll each
into a thin circle, cut in half, and form a cone using water to seal edges.
6. Fill the cone with 1-2 tsp of meat
mixture, then seal the top with water or flour paste.
7. Heat oil in a deep pan and fry samosas
on medium heat until golden and crisp.
8. Drain on paper towels and serve hot with
chutney or lemon wedges.
