Mahamri – 

Sweet, spiced fried bread, similar to doughnuts but infused with coconut milk and cardamom.

Mahamri - Sweet Coconut & Cardamom Fried Bread

Mahamri are slightly sweet, spiced triangular breads from the Kenyan Swahili coast. Flavored with cardamom and coconut milk, they're deep-fried until golden brown and enjoyed with tea or beans like maharagwe.

Ingredients

·         3 cups all-purpose flour

·         1 tsp instant yeast

·         1/2 tsp cardamom powder

·         1/4 cup sugar (adjust to taste)

·         1 cup coconut milk (warm, not hot)

·         2 tbsp margarine or butter, softened

·         Extra flour for dusting

·         Oil for deep frying

Preparation & Cooking Steps

1. In a large bowl, mix flour, sugar, yeast, and cardamom powder.

2. Add softened margarine/butter and mix well using your hands.

3. Gradually add warm coconut milk to form a soft dough. Knead until smooth (~10 minutes).

4. Cover and let the dough rest in a warm place for 1–1.5 hours or until doubled in size.

5. Once risen, divide dough into 2–3 balls. Roll each out to about 1/2 inch thickness and cut into triangles.

6. Heat oil in a deep pan over medium heat. Fry 2–3 pieces at a time, turning until puffed and golden brown.

7. Drain on paper towels. Serve warm with chai or coconut maharagwe.
