Kaimati – Sweet Fried Dough Balls in Sugar Syrup

Kaimati are beloved Swahili coastal snacks – deep-fried dough balls that are golden and crisp on the outside, soft inside, and coated in a sticky sugar syrup. They’re especially popular during Ramadan and festive gatherings.

Ingredients

·         2 cups all-purpose flour

·         1 tsp instant yeast

·         1/4 cup sugar

·         1/4 tsp cardamom powder (optional)

·         1 cup warm water (adjust as needed)

·         1 tbsp oil or melted butter (for dough)

·         Oil for deep frying

·         For the Sugar Syrup:

·         1 cup sugar

·         1/2 cup water

·         1/2 tsp lemon juice or a few drops of rosewater (optional)

Preparation & Cooking Steps

1. In a bowl, mix flour, sugar, yeast, and cardamom powder.

2. Gradually add warm water and the 1 tbsp oil/butter to make a smooth, sticky batter. Let it rise for 45 minutes to 1 hour.

3. Meanwhile, prepare the syrup: Combine sugar and water in a pan. Boil until it thickens slightly, then add lemon juice or rosewater. Set aside and keep warm.

4. Heat oil in a deep pan over medium heat. Using your hands or a spoon, drop small amounts of dough into the hot oil.

5. Fry until golden brown and crisp, turning occasionally for even cooking. Drain on paper towels.

6. Dip the hot fried dough balls into the warm syrup. Toss to coat evenly.

7. Serve warm or at room temperature. Great with chai!
