Samaki wa Kupaka – Grilled Fish in Coconut Sauce

Description:
A coastal Swahili favorite, Samaki wa Kupaka features whole fish marinated in spices, grilled, and coated in a rich, creamy coconut sauce. It brings out smoky, spicy, and creamy flavors all at once. Often served with rice, chapati, or ugali.

For the Fish:

  • 1 whole fish (tilapia or snapper), cleaned and scored

  • Juice of 1 lemon

  • 1 tsp salt

  • 1 tsp turmeric powder

  • 1 tsp paprika

  • 1 tsp garlic paste

  • 1 tsp ginger paste

  • 2 tbsp oil (for marination)

For the Coconut Sauce:

  • 1 cup thick coconut milk

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp ginger paste

  • 1 green chili, chopped (optional)

  • 1/2 tsp turmeric powder

  • Salt to taste

  • 1 tbsp lemon juice

  • 2 tbsp oil (for cooking)


Preparation & Cooking Steps

Total Time: ~1 hour (30 mins prep + 30 mins cook)

  1. Marinate the Fish
    In a bowl, combine lemon juice, salt, turmeric, paprika, garlic, ginger paste, and oil. Rub this mixture all over the fish, especially into the cuts. Let it marinate for at least 30 minutes.

  2. Grill the Fish
    Preheat your grill or grill pan. Grill the fish for 5–7 minutes per side, until fully cooked and nicely charred.

  3. Prepare the Coconut Sauce
    Heat 2 tbsp oil in a pan. Add chopped onions and sauté until golden. Add garlic, ginger, green chili, and turmeric. Stir for 1–2 minutes.

  4. Simmer the Sauce
    Pour in the coconut milk and simmer for 5–7 minutes until it thickens slightly. Add lemon juice and salt to taste.

  5. Finish the Dish
    You can either pour the sauce over the grilled fish or return the grilled fish into the pan and baste it in the sauce for 2 more minutes to soak in the flavors.

  6. Serve Hot
