Mkate wa Sinia, also known as Mkate wa
Mayai, is a beloved Swahili coastal baked dish made from rice, coconut milk,
eggs, and sugar. It has a rich, custard-like texture and is often flavored with
cardamom. Served as a snack or dessert, especially during Ramadan or special
occasions.
Ingredients
·
2 cups rice (soaked overnight)
·
1 ½ cups thick coconut milk
·
4 eggs
·
1 cup sugar (adjust to taste)
·
1 tsp cardamom powder
·
1 tbsp ghee or oil (for
greasing the pan)
·
1 tbsp sesame seeds (optional,
for topping)
Preparation & Cooking Steps
1. Drain soaked rice and blend with coconut
milk until smooth and thick.
2. Add eggs, sugar, and cardamom to the
mixture. Blend again to combine into a smooth batter.
3. Preheat oven to 180°C (350°F).
4. Grease a round or rectangular baking
dish with ghee or oil.
5. Pour the batter into the prepared dish
and let it rest for 10 minutes to remove bubbles.
6. Sprinkle sesame seeds on top if using.
7. Bake for 45–60 minutes or until golden
brown and a toothpick inserted comes out clean.
8. Let cool slightly before slicing. Serve
warm or at room temperature.
